Ghanaian Mum Spices Up Welsh Cuisine Scene with Ronen’s African Kitchen

In the heart of Pontypridd, Wales, a taste of West Africa is brewing, courtesy of Mary Kukua Anderson, a 20-year-old Ghanaian entrepreneur whose passion for cooking has turned into a thriving business venture. Mary’s journey from her home in Ghana to Wales was not just about pursuing a business degree at Cardiff Metropolitan University; it was about bringing the flavors of her homeland to a new community far from home.

Mary’s venture, Ronen’s African Kitchen, named after her 10-month-old son, Ronen, is more than just a business; it’s a celebration of her culinary heritage. Growing up in Ghana, cooking from scratch was second nature to Mary. She learned the art of preparing authentic African dishes from a young age, often helping her family in the kitchen.

Upon arriving in Pontypridd, Mary was surprised to find a lack of African restaurants or takeaways. Determined to fill this gap, she decided to share her culinary skills with her new community. While she dreams of opening her own restaurant one day, for now, she runs her kitchen from home, where she concocts mouthwatering African dishes that have become a hit among locals.

Mary’s kitchen is a hub of activity, with orders pouring in from lunchtime until the evening. Despite the demands of her business, she remains dedicated to caring for her young son, often cooking with him in a baby sling. She describes the process of perfecting her dishes as requiring meticulous attention to detail and extensive food preparation, with some dishes taking up to an hour to prepare.

Reflecting on her transition from Ghana to Wales, Mary noted the stark differences in social dynamics. While Ghana boasts a vibrant and communal atmosphere, she found Wales to be more isolated. Yet, through her cooking, Mary has found a way to bridge this gap, bringing people together through the universal language of food.

Her menu boasts a variety of authentic African dishes, including the beloved jollof rice and Egushi, a vegetarian-friendly dish made with melon seeds. Mary’s dedication to authenticity shines through in her cooking, as she meticulously prepares each dish with care and attention.

Despite the challenges of being a young mother and entrepreneur, Mary finds immense satisfaction in seeing people enjoy her food. She views cooking not just as a skill but as a responsibility ingrained in her cultural upbringing. Now, it has become her source of income and a means of connecting with her new community.

Through Deliveroo, customers can order Mary’s dishes for delivery or pick them up directly from her home. Her menu features staples like jollof rice and waake, as well as traditional starchy dishes such as pounded yam, semolina, and Ghanaian fufu.

As Mary’s business continues to grow, she hopes to expand her reach and introduce even more people to the rich flavors of African cuisine. With her passion, dedication, and love for cooking, Mary Kukua Anderson is not just running a business; she’s sharing a piece of her culture with the world, one delicious meal at a time.

In a world where globalization often homogenizes culinary landscapes, Mary’s commitment to preserving and sharing her heritage through food is truly commendable.
